A heavenly mash up of fudgy brownie meets chewy cookie with a dash of chopped pecans and coconut flakes. These better than crack bars are a cinch to make and a real crowd pleaser.

Happiest Almost New Year’s my friends! If you’re anything like me you’re enjoying every minute of this in between Christmas and New Year’s holiday fog and aren’t quite sure what day it is. My most ambitious goals this week consist of getting  all the wrapping paper into the trash and vacuuming the glitter off the living room rug. All while wearing my bathrobe and new fuzzy slippers of course. It’s still the most wonderful time of the year all the way up until the stroke of midnight on December 31st and I’m not one bit mad about it.

Salads and smoothies can wait it bit longer. We’ve got a few more days to indulge in all things butter and sugar and I for one am happy to revel in all the golden brown baked goods and Christmas cookie platters just a little bit longer. These Better-Than-Crack-Bars are just the ticket to keep your sugar rush running a few more days. Bonus points for being easy to make and with a dusting of powdered sugar they look oh-so-festive as we head into the official start of winter.

These bars are a mash up between a chewy cookie and a fudgy brownie, with a bit of coconut and chopped pecans thrown in for good measure. They are literally the best bar ever to come out of my oven and prepare to be hooked from the very first bite.

Description

A heavenly mash up of fudgy brownie meets chewy cookie with a dash of chopped pecans and coconut flakes. These better than crack bars are a cinch to make and a real crowd pleaser.


Ingredients

Scale
  • 14 ounces good quality semi sweet chocolate chips
  • 15 ounce can sweetened condensed milk
  • 1 cup plus 2 TBSP unsalted butter, divided
  • 2 1/2 cups light brown sugar
  • 2 eggs, lightly beaten
  • 2 1/4 cups all-purpose flour
  • 1 tsp kosher salt
  • 1 1/2 tsp vanilla
  • 1/2 cup chopped pecans
  • 1/2 cup flaked coconut
  • 1/4 cup confectioners sugar for dusting

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray a 9 x 13 pan with non-stick cooking spray and line with parchment paper.
  3. Over a double broiler, melt together 2 TBSP butter, chocolate chips and sweetened condensed milk.
  4. Set aside to cool slightly.
  5. Meanwhile, in a large saucepan over medium heat melt 1 cup of butter.
  6. Once melted, add brown sugar and stir until fully dissolved.
  7. Remove from heat.
  8. Add flour, salt, vanilla, eggs, nuts and coconut to brown sugar butter mixture.
  9. Combine well.
  10. Spread half of the flour mixture into the bottom of the 9 x 13 pan.
  11. Spoon melted chocolate over the dough, leaving some bits of dough uncovered.
  12. Scoop remaining spoonfuls of dough on top of chocolate mixture, leaving some bits of chocolate uncovered.
  13. Bake for 30-35 minutes or until golden brown on top and set in the center.
  14. Cool for an hour before removing bars from pan.
  15. Slice into squares.
  16. Dust with confectioners sugar if desired.

    Can you use other nuts you have on hand besides the chopped pecans?

    Would you freeze these in the pan or cut them and then freeze?

      Either way will work but they will defrost faster if you cut them and freeze in individual squares.
