A rich, gooey dark chocolate brownie made in a skillet with a swirl of creamy, homemade peanut butter. Topped with ice cream and this is one seriously epic dessert meant to be shared.
Can you believe it’s only Wednesday? Goodness. Sometimes we get lucky and a week flies by in a hot minute. And other times it just drags and drags {and drags} while we crawl our way to the finish line affectionately known as Friday. Oh, FRiYAY…we love you so! Arguably the best day of the week. Wednesday? Not so much. No one ever calls Wednesday, WednesYAY. Nope. It’s just not a thing.
Today’s recipe just might put a dash of Friday spirit into your midweek slump. If a dark chocolate skillet brownie swirled with creamy, homemade peanut butter doesn’t put a little pep in your hump-day step, I don’t know what will. This brownie just might be the fudgiest brownie I’ve ever whipped up and don’t even get me started on the perfectly salted peanut butter made from scratch. It’s out of this world delicious! Put the two together in a large cast iron skillet and you have one seriously epic dessert.
Baking these brownies in a cast iron skillet gives you loads of that crackled, chewy crust you wouldn’t normally get in a regular brownie pan. The peanut butter swirl adds to the ooey gooey factor of this dessert and it’s pretty much mandatory to top it all off with one or two {okay, three!} scoops of vanilla ice cream. There’s really not much else to say except for Pass.The.Spoon. Please and thank you.

Description
A rich, gooey dark chocolate brownie made in a skillet with a swirl of creamy, made from scratch peanut butter. Topped with ice cream this is one seriously epic dessert meant to be shared.
Ingredients
For Skillet Brownie
- 1 cup unsalted butter
- 1 1/2 cups dark chocolate, roughly chopped {I use 70% cocoa)
- 3/4 cups unsweetened cocoa powder
- 2 cups granulated sugar
- 4 eggs, room temperature
- 1 cup all-purpose flour
- 3/4 cup homemade peanut butter {or other smooth, creamy peanut butter}
For Homemade Peanut Butter
- 2 cups dry roasted peanuts
- 1 TBSP granulated sugar
- pinch of salt to taste
Instructions
For Brownie Skillet
- Preheat oven to 350 degrees.
- Grease a 10 inch skillet with softened butter.
- To prepare peanut butter, place peanuts in a food processor and turn on high for 4-5 minutes. Mixture should resemble liquid and be smooth.
- Add sugar and salt and pulse food processor 2-3 times to combine.
- Pour peanut butter into a bowl or jar and chill in refrigerator until ready to use.
- Over a double boiler, melt butter and chocolate in a bowl over medium heat until completely melted and smooth.
- Remove from heat and sift cocoa powder over the melted chocolate mixture.
- Whisk together until smooth and shiny.
- Set aside to cool slightly.
- In the bowl of a stand mixer fitted with the whisk attachment, mix together eggs and sugar until pale and creamy. Beaters should make a ribbon-like trail when you hold the whisk attachment up over the bowl of batter.
- Add in the melted chocolate mixture and gently fold together using a rubber spatula.
- Do not over mix.
- Gently fold in flour.
- Pour batter into the prepared skillet, using a spatula or the back of a spoon to spread to the edges.
- Using a tablespoon, dollop dots of peanut butter over top of brownie batter.
- Use a table knife to gently swirl the peanut butter into the brownie batter.
- Bake for 20-25 minutes or until the edges have set and center is still slightly under baked.
- Remove from oven and cool on a wire rack until ready to serve.
- Serve with ice cream if desired.
Notes
Recipe will make more peanut butter than needed for the skillet brownie.
Store extra peanut butter in a jar in refrigerator.

February 10, 2020 at 3:53 pmHello, do you think a seedless raspberry jam swirled in would be okay? My husband is not a fan of peanut butter (I know!). I was planning on using my enameled cast iron sauté pan for the brownie with baking spray. Do you think I should turn the heat or time up or bake as directed? Thanks!

I think the raspberry jam sounds like a delicious idea! As for the pan, I would use the same temperature but keep an eye on the baking time as it may bake up faster. Hope you enjoy!
