I’m all for a three day weekend but let’s face it, we kind of pay for it the following week. Tuesday feels like Monday and no one likes a Monday-ish Tuesday. By the time we get to Thursday it feels like we had two Wednesdays and Friday cannot come soon enough. It’s finally FRIDAY {insert cartwheel} and since you made it to the weekend you deserve a cookie! These Everyone’s Favorite Chocolate Chip Cookie Bars are just the thing to start your TGIF off on a high note.

These bar cookies are made in under thirty minutes with two bowls, one pan and a scant twenty minutes in the oven. Unlike this lonngggg four day work week, these bars come together in a heartbeat and I’ll bet you have all the ingredients you need right there in your pantry. You’ll be hard pressed to find an excuse NOT to make them. These golden brown goodies are my go-to for every book club, bake sale, team party and classroom birthday on the calendar.  You name it, these bars have been there.

Everyone loves these little squares of goodness and this sometimes-lazy-baker loves that I don’t have to scoop cookie dough. Great arm workout and all, but when I need to get something warm and buttery out of the oven in no time I reach for this recipe. Actually, if I’m being honest you should know that I have it memorized and filed in my baker brain under “recipes that are embarrassingly easy to make”. Description

A thick, buttery chocolate chip cookie bar that comes together in one pan and less than twenty minutes in the oven. Be queen of the bake sale with these one pan wonders that everyone loves.


Ingredients

Scale
  • 14 TBSP unsalted butter, room temperature
  • 3/4 cup light brown sugar
  • 1/2 cup minus 1 TBSP granulated sugar
  • 1 large egg, room temperature
  • 1 1/2 tsp vanilla
  • 1 cup bread flour
  • 1 cup plus 2 TBSP all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 heaping cups semi-sweet or dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees
  2. Grease a 9 x 13 baking pan with non stick spray and line with parchment paper
  3. In a small bowl, mix together flours, baking soda and salt
  4. Whisk to combine, set aside
  5. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugars together until light and fluffy, about 2 minutes
  6. Add the egg and vanilla and mix on medium until combined
  7. Slowly add the flour mixture, with mixture on low, until almost all the flour is combined but some bits still remain
  8. Remove from mixer and gently stir in chocolate chips
  9. Transfer to the batter into the prepared baking pan and level the top with a spatula
  10. Bake 18-20 minutes until golden brown and center is set
  11. Cool on a wire rack and cut into squares

Notes

If you do not have bread flour available, substitute all purpose flour
Store tightly covered in a cool, dry place
