A creamy homemade fudgsicle coated in a rich chocolate shell coating makes these a classic summertime favorite. This delicious and refreshing frozen treat is the perfect way to beat the heat all summer long.
Summer is in full swing and the dog days of summer have arrived. By Southern Cali standards the weather this past weekend was hot, hot, hot! I’m talking fry an egg on the sidewalk kinda hot. Crank up the AC 24/7 kinda hot {insert dollar signs $$$}. Two showers a day kinda hot. You get the idea. When these summertime temps hit an all time high, even Betty Baker over here is the last one that wants to crank up the oven. Only two things sound remotely good on days like this….an ice cold boozy cocktail on the rocks or a frozen sweet treat on a stick. TBH, I did have a chilled, salty margarita or two this weekend followed by my fair share of these homemade chocolate covered fudgsicles. Pro tip: when a heat wave strikes, make popsicles.
If you’ve been hanging around here for a hot minute you know by now that I’ve got a thing for chocolate. One peak at my Instagram page and you”ll notice a trend…..chocolate, chocolate, and more chocolate. A few favorites stand out like my Extra Dark Chocolate Snack Cake {to-die-for}, Chocolate Lover’s Banana Bread (hello!!!) and swoon-worthy Brown Butter Brownies {stupid good!}. The list goes on and on when it comes to my chocolate obsessions. Popsicles are no exception….the more chocolate the better in my book. Clearly I’m on the chocolate train and I have no plans of hopping off any time soon.
So when I was dreaming up the picture perfect popsicle I knew it had to involve chocolate…and lots of it. These chocolate covered fudgsicles are the just the thing to beat the heat. With their luscious, creamy chocolate flavor and rich, crunchy coating these pops will help you keep your cool all summer long. These classic fudgsicles are a real crowd pleaser good for all ages from 2 to 92. Dress them up with some finely chopped almonds crushed over the crispy chocolate topping and you now have a dessert that adults will stand in line for. Cuz why should the kids have all the fun?
I’m not gonna lie, the R-E-A-L magic of these fudgsicles is the crunchy, chocolate coating. It’s reminiscent of that magic shell topping everyone loves as a kid but better. It’s as good as gold and you’ll be surprised at just how easy it is to make. One bowl, two ingredients, and sixty seconds in the microwave is all it takes. Easy peasy. Fair warning…it’s ever so slightly addictive so don’t come crying to me if you find yourself smothering all your food in this chocolate shell magic. Description
A creamy homemade fudgsicle coated in a rich chocolate shell coating makes these a classic summertime favorite. This delicious and refreshing frozen treat is the perfect way to beat the heat all summer long.
Ingredients
For Fudgsicles
- 7 ounces whole milk
- 7 ounces heavy cream
- 3 TBSP cocoa powder
- 3 TBSP sugar (add an extra TBSP if you prefer a sweeter popsicle)
- 1/2 tsp vanilla
- 1/8 tsp sea salt
For Chocolate Coating
- 1 cup semi sweet chocolate chips
- 3 TBSP coconut oil, solid when measured
Instructions
For Fudgsicles
- In a blender or large bowl, blend or whisk all ingredients until well combined.
- Spread mixture evenly between 6 popsicle molds and freeze four hours or overnight.
- Once fudgsicles are solid, carefully remove from molds.
For Chocolate Coating – – Recipe adapted from Brown Eyed Baker
- Place chocolate chips and coconut oil in a microwave safe bowl.
- Microwave in 30 second increments, stirring after each interval until melted.
- Let sit 20 minutes at room temperature.
- To assemble, pour or drizzle coating over frozen fudgsicles.
- Re-freeze if necessary.
- Store remaining chocolate shell in sealed container at room temperature.
