Ever since I was a kid Easter has always been my favorite day out of all three hundred and sixty five. It’s almost brunch-o’clock and it’s no secret that I love a dessert that doubles as breakfast. If you are looking for an easy and delicious Easter treat to share with your love bunnies, take a peak at this list of easy and delicious springtime recipes. I hope you find a little something {or a few somethings} that will make your Easter celebration special.
Carrot Cake Loaf
This delicious, no-fuss carrot cake tastes just like it came straight out of your grandmother’s kitchen. It’s familiar and nostalgic in all the best ways and it could not be easier to make. It’s super moist and fluffy, perfectly spiced and topped with a silky smooth cream cheese glaze. What’s not to love?!

The fact that these cupcakes are super cute is obviously a selling point. But if you need further convincing, let me just repeat the words “brown butter cream cheese frosting”. Enough said.

I could go on and on (and on!) about how good this donut cake is. Every bite makes you feel like a kid again and who doesn’t love a donut in cake form? It’s as easy as 1,2,3….just mix, bake and sprinkle with powdered sugar.
Brown Sugar Bundt Cake
This brown sugar bundt cake isn’t likely to last long at Easter brunch, but if you happen to have any left over, a slice of this bundt makes the perfect parting gift for your guests as they head out the door. The Best Coconut Layer Cake
Every Easter table needs a show stopping centerpiece that says “Hello Spring!” I don’t make a lot of layer cakes so if I’m going to go through all the effort of baking and stacking and frosting and all that jazz, it had better be a really good cake. This cake is not just good. It’s not even great. It’s INCREDIBLE! Just add flowers!!
Lemon Brownies
Not to be confused with a lemon bar. Or a lemon “blondie”. These are brownies through and through. Pucker up lemon lovers….these lemon brownies are so good you may never have a lemon bar again!
Old Fashioned Donut Cake
Speaking of breakfast….how about a giant glazed old fashioned donut cake baked golden brown in a bundt pan? Ummm…yes, please! Perfectly moist and topped with a sweet vanilla drizzle, this cake tastes exactly like a classic old fashioned donut, but in cake form! Serve this cake warm on Easter morning and there won’t be a crumb left over. Promise.

Any cake that tastes like a Creamsicle is my kinda cake. Bursting with bright citrus flavor, this cake deserves a spot front and center at your Easter table.

Carrot Cake Cookie Sandwiches
These cookie sandwiches are everything you love about carrot cake but in cookie form. You won’t find any raisins or nuts here, but I can offer you a cream cheese frosting like no other. Hint: it’s made with brown butter. Find this recipe in the pages of my debut cookbook, Stuffed: The Sandwich Cookie Book.
Have a happy and delicious Easter!
